About the due South ending: I read somewhere that David Marciano wanted he and Fraser to have a phone call like the one in BDTH, saying they'll be friends even though Fraser went back to Canada. For some reason, that wasn't approved. Also, remember that the original scripted ending wasn't the one filmed, and it didn't seem to have Ray with Stella. Go to fanlore's Ray Wars page and scroll down to Alternative ending. All of the actors choosing their endings may not really be true.
Well, what I read was a Paul Gross interview. So I have a little more faith in that.
